Ingredients

  • 2 tbs low fat granola with almonds
  • 1 red apple diced into 1/2 inch pieces
  • 1 tbs dried sweetened cranberries
  • 1/4 tsp tsp apple pie spice or ground cinnamon
  • 1 tsp margarine
  • 1 pkt sugar substitute
  • 1/4 tsp almond extract
  • 2 tbs vanilla low fat ice cream

Step 1

1. Place granola in small resealable food storage bag. With a rolling pin, crush lightly to form coarse crumbs. Set aside. Heat large skillet over med heat until hot; coat with nonstick cooking spray. Add apple, cranberries and apple pie spice. Cook 4 min or until apples are just tender, stirring frequently.

2. Remove from heat. Stir in margarine, sugar substitute and almond extract. Spoon into 2 desert bowls or dessert plates. Sprinkle with granola. Spoon ice cream on top. Serve immediately.
