Ingredients
- 3/4 cup (1 1/2 sticks) butter,room temp.
- ◦1 1/2 cups sugar
- ◦2 large eggs
- ◦4 ripe bananas, mashed
- ◦2 1/2 tsp vanilla extract OR 1 1/2 tsp vanilla & 1 tsp banana extract
- ◦2 cups sifted all-purpose flour
- ◦1 tsp baking soda
- ◦1 tsp salt
- ◦1/2 cup buttermilk,
- ◦1 cup chopped pecans or walnuts

1.Preheat the oven to 350° F. Grease two 9- x 5-inch loaf pans or one bundt pan
2.With an electric mixer, cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the bananas and vanilla. Sift the flour together with the baking soda and salt, and add to the banana mixture alternately with the buttermilk, beginning and ending with flour. Fold in the nuts.
3.Pour the batter into the loaf pans or bundt pan and bake for 55 minutes for the loafs and 60-65 minutes for bundt. Cool completely before turning bundt out. Or slightly cool before turning out the two loaves onto a wire rack to cool completely.
Makes two (9- x 5-inch) loaves OR one regular Bundt
