Ingredients

  • 1/2 cup butter or margarine
  • 1 cup onion minced
  • 1/2 cup pimiento minced
  • 2 tablespoons parsley minced
  • 1 cup bread crumbs
  • 3/4 cup carrot finely shredded
  • 1 egg slightly beaten
  • 1/2 cup water
  • 1/4 cup Parmesan cheese grated
  • 1 teaspoon celery seed
  • 8 flounder fillets

Step 1

In large skillet melt butter; remove and reserve 1 tablespoon. Saute onions, pimientos, and parsley for 3 minutes. Remove from heat. Add bread crumbs, carrot, egg, water, cheese, and celery seed; mix well. Spread carrot mixture on fillets; roll up. Place seam side down in shallow baking dish; brush with reserved butter. Bake fish rolls in pre-heated 350 degree oven for 25 to 35 minutes.
