Ingredients
- For The Glaze:
- 4 Racks Baby Back Ribs, Peeled - Skin On Back Off
- 1 Qt Pineapple Juice
- 1 Bunch Cilantro, Washed And Rough Chop
- 2 Cups Pineapple Juice
- 1 Cups Cider Vinegar
- 3 Tbsp Brown Sugar
- 3 Tbsp Butter
- 1/2 Cups Jerk BBQ Seasoning, Make Your Own Or Buy It
- PINEAPPLE BBQ SAUCE:
- 2 Cups Pineapple Juice
- 2 Tbsp Cilantro, Chopped - Fine
- 3/4 Cups Ketchup
- 3 Tbsp Cider Vinegar
- 2 Tbsp Worcestershire Sauce
- 2 Tbsp Brown Sugar
- 1 Tbsp Soy Sauce
- Salt And Pepper

Step 1
Make the Pineapple Barbecue Sauce first:
Combine the Pineapple juice and the Cilantro in a heavy pan and boil until reduced to half as much.
Then stir in the other items and simmer for about 10 minute. - Salt and Pepper to taste and set aside.
Place ribs in a large roasting pan and Pour 4 cups of pineapple juice over them and the cilantro and marinate
over night or at lease 3 hours.
Now make the glaze:
Place 2 cups of the pineapple juice in a sauce pan add the other items and boil down to about 1/2. set aside.
When you are ready for the ribs:
Drain the ribs and sprinkle on both side with the jerk seasoning - rub it in on both sides-rubbing it into the meat.
Put into the oven or on the BBQ for about 1 & 1.2 hours - Use a rib rack if you have one.
As they are cooking glaze them every 1/2 hour with the glaze you made first. When they are done - and falling off the
bones, serve with the BBQ Sauce that you made.
