Vegan Chocolate Cashew Cream Filled Chocolate Hazelnut Cookies
Here's a quick and easy weekend treat. Marriage made in heaven combination of hazelnuts and chocolate. It's the magic that makes Nutella work I just know it. Roasting the hazelnuts before you make these cute little cookies would intensify the flavor immensely, I left them raw and they're still pretty damn awesome. Just watch it when you make the chocolate cream filling as there is the potential for it to me a bit soft. If that happens all is not lost just make sure you add it just before you serve them. Keep the cream in the fridge or put it in the freezer for 10 minutes either in the bowl or in the piping bag. Both will work it's just that one will look a bit nice than the other.

Chocolate Cashew Cream filled Chocolate Hazelnut Cookies - raw vegan

Ingredients
- COOKIES:
- 1/2 cup hazelnuts
- 1/2 cup almonds
- 1/2 cup pitted dates
- 1/2 cup organic dried apricots
- 1 1/2 tbs raw cacao powder
- 1/2 teaspoon vanilla powder or paste
- CHOCOLATE CREAM:
- 100 ml raw cashews, soaked 3 to 4 hours, rinsed and drained
- A little bit less than 50 ml water
- 2 tablespoons agave, maple syrup, coconut syrup or raw honey (honey not vegan)
- 1 tablespoon raw cacao powder
- 1/4 teaspoon vanilla powder or paste
- 1 tablespoon melted coconut oil

Step 1
Add all cookie ingredients to a high speed blender or food processor and blend until it turns fudgy.
Add all ingredients to a good quality personal blender and blend until super smooth and creamy then place into the fridge to cool and become firm enough to add to a piping bag and pipe into the center of the cookies.
It's best to use the least amount of water that you can so that the cream is nice and firm once cooled. If you need to add more to get it to blend then add 1 teaspoon at a time.
