NO BAKING REQUIRED - CRISPY APRICOT BARS

Ingredients
- 1 1/2 cups dried apricots
- 2/3 cup packed light brown sugar
- 1 slick (1/2 cup) butter or margarine
- (not spread), cut up
- 4 squares (1 ounce each) white chocolate
- 3 cups crisp-rice cereal

Preparation
Step 1
1. Spray an 8-inch square baking pan
with nonstick cooking spray.
2. Put apricots and brown sugar in a food processor and turn on/off until finely chopped. Scrape into a heavy medium-size saucepan. Add butter and 2 squares of the white chocolate.
3. Stir over medium-low heat until butter
and chocolate are melted, sugar dissolved and apricots are coated. Remove from heat. Stir in cereal until blended.
4. Scrape into prepared pan and cover with waxed paper. Place another 8-inch square baking pan or a heavy book on top. Press to compact mixture into an even, firm layer. Refrigerate 30 minutes or until cool.
5. Melt remaining 2 squares in a small bowl in microwave or stir in a small saucepan over low heat until smooth. Drizzle over cereal mixture, cover loosely and let stand at room temperature
until cereal mixture is firm, about 1 hour. Cut in bars. Store loosely covered at room temperature up to 2 days.
