  • 1 Double-crust pie dough
  • 4 Cups pitted sour cherries
  • 1 1/4 Cups sugar
  • 3 Tablespoons tapioca
  • 1/8 Teaspoon cinnamon
  • 1/8 Teaspoon salt
  • Few drops almond extract
  • 2 Tablespoons butter

Preparation

Step 1

Line pie plate with 1/2 of pastry. Refrigerate. Wash, drain and pit cherries. Mix sugar, flour, cinnamon and salt together and sprinkle small amount over pie crust. Mix remainder with cherries, and pour into pie plate. Sprinkle with almond extract and dot with butter. Place 1/2 inch wide strips of additional pastry, lattice fashion, over pie, or completely cover with pastry. Flute edges. Bake at 425 for 35-45 minutes.
