Ricotta Cherry Mousse

Ingredients
- 1 lb. Whole milk ricotta
- 2 tab. Honey or more to taste
- 1-2 tabs. Orange liqueur
- almond extract
- tsp vanilla extract
- 2 cups freshly pitted dark cherries
- cup shaved semisweet chocolate
- 1/3 cup slivered, toasted almonds

Preparation
Step 1
Place the ricotta in a mixing bowl and whip with an electric mixer at high speed. Gradually add the honey, keep beating. Mix in liqueur and the extracts. Fold in cherries. Chill! Top each serving with shaved or grated semi sweet chocolate and almonds.
