Breaded Coconut Shrimp

Breaded coconut shrimp baked to a golden brown. Dipped in a mango sauce.
Ingredients
- Shrimp:
- coconut, puree
- 1 \2 c. panco breadcrumbs
- salt, a little
- 2 Tbsp. curry powder
- 2 eggs whites
- 1 1\4 lb. shrimp
- Mango Dipping Sauce:
- 4 Tbsp. mango marmelade
- 1 Tbsp. dijon mustard
- 4 Tbsp. orange juice

Preparation
Step 1
Preheat oven to 400 degrees
Shrimp:
1. Mix panco bread mix and seaonings(salt, curry) in shallow dish.
2. Dip shrimp in egg whites. Dip shrimp in Panco bread mix. Dip in coconut mix.
3. Bake at 400 degrees for 12-15 min.
Mango Dipping Sauce:
1. Mix together all ingredients.
