Pears Blue Cheese Salad

Ingredients
- 1 receipe Dijon Vinaigrette -- or 3/4 cup purchased
- 2 tbsp butter
- 1 cup pecan halves
- 1 tbsp sugar
- 16 cups lettuce -- mixed chicory, endiv
- 3 ripe pears -- cored and thinly sli
- 1 cup crumbled bleu cheese
- Make viniagrette!
- 5 tbs. olive oil
- 3 tbs. chopped onion or shallots
- 2 tbs. white wine vinegar
- 1 tbs. dijon style mustard
- salt, pepper

Preparation
Step 1
Add pecan halves to skillet in melted butter until lightly toasted. Sprinkle sugar and salt over pecans. Transfer to bowl to cool! Combine lettuce, pears and blue cheese and half of pecans. Pour viniagrette over all and then top with the rest of the pecans.
