Cucumber Kale Salad with Vegan Tzadziki

One of my favorite quick salads to make: Kale and cucumbers with cashew Tzatziki sauce and Sriracha. The cashew sauce I use here is basically: cashews, water, lemon juice, garlic, salt, olive oil, and dill.
