Creamed Green Cabbage

Ingredients
- Coarse Salt and freshly ground pepper
- 1 sm. head green cabbage, cored and shredded. 10 cups, about 2 1/2 lbs.
- 3 tab. unsalted butter
- 1/4 cup all purpose flour
- 2 cups warm milk
- 1/4 cup mounded finely grated Pecorino Romano cheese (1/2 oz)
- 1 tab. finely grated lemon zest (2 lemons)

Preparation
Step 1
Preheat oven to 350. Bring 1 inch of salted water to a bowl. Add cabbage. Steam until tender for approx. 5 min. Drain and let cool. Squeeze out excess water.
Melt butter till bubbling, stir in flour and then milk. Slowly whisk to create sauce. Thick enough to coat back of spoon.
Remove from heat. Add 3/4 of cheese and lemon zest. Fold in cabbage and season with s&p.
Spoon mixture into baking dish. Sprinkle with 1/4 of cheese. Bake until bubbly! 30 to 35 mintues. Let stand for 5 min. before serving!
