  • Crust:
  • 6 oz white chocolate, melted
  • Filling:
  • 1 1/2 lbs. cream cheese, room temp
  • 4 eggs, room temp
  • 3/4 cup sugar
  • 1 1/2 cup papaya, mashed
  • Garnish:
  • macadamia nuts, chopped

Step 1

To make the crust, melt the white chocolate. Spread chocolate on to the bottom of a well buttered 9 inch springform pan. Set aside.

Preheat oven to 350 degrees.

To make the filling, In a mixer, beat cream cheese, until smooth, on medium speed. Add eggs, one at a time, beating well after each addition. beat in sugar. Fold in the papaya.

Pour filling into crust and bake for about 50 minutes, until edges are puffed and golden. Remove from oven and let cool on a wire rack for 1-2 hours. Remove rim of pan and chill for 4-6 hours. Garnish chilled cheesecake with macadamia nuts.
