Tamar's Banana Bread

Ingredients
- 1/2 c. vegetable oil
- 1 c. sugar
- 2 eggs, lightly beaten
- 1 1/4 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 3 - 5 large ripe bananas, mashed
- 1 tsp. ground cinnamon

Preparation
Step 1
Preheat oven to 350.
Grease two 9 X 5 X 2 loaf pans.
Using an electric mixer, beat oil and sugar together for 2 minutes in a large bowl. Add eggs and mix well.
In a separate bowl, sift together flour, baking powder and baking soda. Add to egg mixture and beat for 2 minutes.
Add in bananas and cinnamon and beat unbtil well blended.
Pour into prepared loaf pans. Bake for 45 - 50 minutes. Cool 10 minutes in pans, then remove to a wire rack. Serve warm or cold. Bread may be frozen.
