Refrigerator Cookies

Refrigerator cookies are great for a busy bee, this is easy dough to make that you can keep refrigerated for weeks until you have time to bake and enjoy them.
Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg
- 2 cups flour
- 1 teas. baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla

Step 1
Cream butter and sugar until light and fluffy. Add egg and vanilla, mix thoroughly.
Sift together all dry ingredients and add to the mixture gradually, beating after each addition until smooth. (If you want to add, nuts, coconut or chocolate chips, add them now - 1 6 ounce pack of chips or 1/2 cup coconut or nuts.)
Shape dough into a roll 2 inches in diameter. Wrap roll in wax paper and chill until firm enough to slice - about 2 hours. Cut into slices 1/8 inch thick and place on ungreased cookie sheet.
Bake at 400˚F. for 5-7 minutes. Remove immediately.
