Chicken Breasts stuffed with Spinach

Ingredients
- 4 Chicken Breasts, boneless and skinless
- 1 ) 10 oz okg frozen Spinach, thawed and drained
- 2 garlic cloves, chopped
- 1/2 Cup Feta Cheese, crumbled (low-fat)
- 1/2 Cup Mayonnaise (low-fat)
- 4 slices Bacon (turkey)

Preparation
Step 1
Preheat oven to 375`F
Mix Mayo, feta cheese, spinach and garlic until well blended, then set aside.
Butterfly Chicken breasts ensuring not to cut all the way through.
Spoon the spinach mixture into the chicken breasts & wrap each breast with a piece of bacon, then secure with toothpick. Put in shallow dish and cover.
Bake for 1 hour or until chicken is no longer pink.
Serves 4
