Stuffed Salmon "Sandwich"

The two matching fillets have a homemeade bread stuffing.
I use whole salmon fillets (2 lbs + each) and triple stuffing receipe to make a dinner for 6
Ingredients
- 2 TBL olive oil
- 1 large onion
- 4 tablespoons chopped walnuts taosted (heat in 350 degree oven 8-10 min til fragrant and then cool)
- 3/4 cup bread cubes (I use italian type or Panerra fresh bread, cut into 1/2 inch slices and then cubes and then baked in a 350 oven until toasted)
- 2 ripe plum tomatoes chopped
- 2 TBL chopped fresh basil
- 2 TBL blasamic vinegar
- 2 center cut salmon fillets each weighing 8-9 ounces

Preparation
Step 1
Preheat oven to 400
het oil in skillet med and add in onion Saurte till softened 8-10 min
stir in walnuts and cook till start to brown
stir in bread cubes and tomatoes and continue to cook until bread cubes start to soften and tomatoes release som e of their juicesstir in basil and vinegar and remove from heat
Arrange on fillet on foil lined pan skin side down
top with stuffing and pat down
Top with second fillet skin side up (the stuffing will hang out over the edges)
Bake for 20 to 25 min til top fillet is cooked but still moist
