- 1 egg
- 1 cup very cold water
- 2/3 cup pastry flour
- 1/3 cup cornstarch
- 1 teaspoon baking powder
- Salt to taste
- 1 pound oyster mushrooms* cut or torn
- into large pieces
- Oil for deep-frying

Step 1
* Alternate Mushrooms: Common Store Mushroom, Shiitake
Beat the egg slightly in a mixing bowl. Stir in the cold water, flour, cornstarch, baking powder, and salt to make a thin batter. Dip the mushrooms into the batter.
Heat the oil to 375 degrees and deep-fry the mushrooms until golden brown. Drain on paper towels and serve immediately.
