Zucchini Pasta

Ingredients

  • 2 large zucchini, peeled and julienne with julienne peeler
  • 1 tbsp extra virgin olive oil
  • 1 tsp kosher or sea salt
  • 4 cloves garlic, sliced
  • Freshly grated parmesan cheese

Preparation

Step 1

1. Prepare zucchini, julienne with a julienne peeler. Place zucchini in a bowl of salted cold water for 15 minutes, drain, and rinse
2. Heat 1 tbsp of extra virgin olive oil in a large non stick skillet over medium heat, add garlic and cook and stir for 1 minute
3. Add zucchini and saute for 5 minutes or until tender. Do Not overcook
4. Serve with Freshly grated parmesan cheese

Serve with Chicken Meatballs
