Cold Beetroot Soup
Cold beetroot soup also known as Lithuanian borstch , traditionally served with hot boiled or fried potatoes.

Ingredients
- 2 medium beetroots (boiled)
- 5 medium cucumbers
- 4 eggs (hard boiled)
- 6 cups kefir
- 4 tablespoons sour cream
- 1/2 cup drinking water
- 1 bunch dill
- 1 bunch green onion
- 1/2 tablespoon sugar
- 1 teaspoon salt

Preparation
Step 1
Grate the cucumbers, eggs and beetroots on a coarse grater.
Chop the onion and dill.
Put all the ingredients in a large pot.
Pour in the kefir and add sour cream. Mix all well.
Add salt, sugar and water. Mix well again.
Put the beetroot soup in the fridge for 1 hour.
