Heart-Healthy Salmon Salad

Most tuna now has too much mercury in it to be safe, so I'm trying to find another outlet for my tuna salad addiction. This recipe is from the "30-Day Heart Tune-up," by chef-cardiologist Steven Masley. His work focuses on appealing life style changes to increase heart health and circulation, lowering the risks of heart attacks, strokes, inflammation, diabetes, and slowing the aging process. He recommends a diet of adequate fiber, healthy fats, lean protein, along with specific supplements.

Ingredients
- 6-7 oz can pink or red Alaskan salmon
- 2 medium green onions, thinly sliced
- 1-1/2 teaspoons Dijon mustard
- 2 Tablespoon organic hummus or light mayonnaise
- ! Tablespoon capers
- 1 teaspoon lemon juice
- 1 medium stalk of celery, diced
- hot sauce (optional), to tasted

Step 1
Drain the salmon and flake with a fork. Mix in all the remaining ingredients. Chill until ready to serve.
