Chocolate banana pancakes

Ingredients
- 1 cup all-purpose flour
- 1 tablespoon white sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 egg, beaten
- 1 cup milk
- 2 tablespoons vegetable oil
- 2 ripe bananas, peeled and cut into 1/8 inch slices
- 1/2 cup bittersweet chocolate, cut into 1/4 inch chunks

Step 1
In bowl, combine the flour, sugar, baking powder and salt, and mix well. In a separate bowl, combine the egg and milk and then add the flour mixture, whisk slightly. The mixture will be slightly lumpy. Add the bananas and chocolate, mix. Heat a non stick fry pan over medium low heat and ladle in the pancake mixture to desired size with equal amounts of banana and chocolate chunks. Cook for 2 minutes or unitl pancakes bubble slightly and edges look dry. Carefully flip and cook additional 2 minutes. Repeat with rest of batter. Serve warm with maple syrup.
