Ingredients
- 1 ripe banana, mashed
- 1 egg and 2 egg whites, beaten
- 1 3/4 cup skim milk
- 1/2 cup unsweetened applesauce
- 1 Tbsp vanilla extract
- 1 1/2 cups whole wheat flour
- 1/2 cup white flour
- 1 Tbsp baking powder
- 1 Tbsp Stevia
- 1/4 tsp salt

Preparation
Step 1
1. Preheat your waffle iron and coat with non-stick cooking spray.
2. In a medium size bowl, mash banana. Add eggs, milk, applesauce and vanilla extract and whisk together until combined. In a large bowl, whisk together flours, baking powder, Stevia and salt. Beat egg mixture in with the flour mixture until only a few lumps remain.
3. Carefully spoon the batter onto the pre-heated waffle iron and cook until golden brown. Repeat until batter is finished.
