I've been trying for a long time to make Polish cabbage soup for my wife "the way Grandma used to make...". She says this isn't quite it, but allows as how it's close...

Ingredients

  • 2 lbs spare ribs (or country ribs)
  • 1 lg head of cabbage, shredded
  • 1/2 cup white vinegar
  • 2 tsp salt
  • 2 tbsp brown sugar
  • 1 sm can sauerkraut, undrained
  • 1 8 0z can tomato sauce
  • 1 lg onion, chopped

Preparation

Step 1

Cook pork in 3 quarts water for 1 hour. Add cabbage, vinegar, salt, sugar, tomato sauce and sauerkraut. Saute nions in olive oil in a frying pan until just tender. Add to the soup. Serve when ribs are fork tender (note: if using country ribs, remove from soup, shred meat, return to soup).
