Ingredients

  • 1 pound ground beef
  • 1/2 cup onion, diced
  • 1/2 cup green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 2 teaspoon sea salt
  • 8 ounces cream cheese, softened
  • 1 can (26-ounce) Ro-tel tomatoes, undrained
  • 1 cup beef broth
  • 1/2 cup heavy cream

Step 1

In a large soup pot, brown the ground beef with the onion, bell pepper and garlic; drain well.

Add the spices and cook a couple minutes. Drop the block of cream cheese into the meat. With the back of a wooden spoon, smash it into the meat until no bits of white remain.

Add the Ro-tel, broth and heavy cream and mix well. Simmer for 30 minutes.
