Grilled Pepper-Crusted Strip Steaks and Creamy Garlic Spinach

  • Peppery Rub
  • 1 tsp lemon pepper
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp ground chipotle pepper
  • 4 beef top loin (strip) steaks, 1 1/4" thick
  • Creamy Garlic Spinach
  • 1 16 oz package fresh baby spinach
  • 1 5/2 oz package spreadable garlic and herb cheese, at room temperature
  • 1 tbsp cream or milk

Step 1

Combine the rub ingredients; press evenly onto steaks. Place steaks on grill over medium, ash-covered coals. Grill, uncovered, about 15-18 minutes for medium-rare to medium doneness, turning occasionally.

Meanwhile, prepare the spinach. Bring a large pot of water to a boil. Add spinach; remove from heat. Stir just until spinach is wilted. Drain well, pressing out excess liquid. Wipe the pot dry; return spinach to the pot. Add cheese and cream; stir until cheese melts and coats spinach evenly.

Serve the steaks with the spinach.
