Ingredients

  • Icing:
  • 3 cups flour
  • 1 tsp
  • 1 tsp baking powder
  • 1 tsp soda
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 1/2 cups oil
  • 2 cups sugar
  • 3 eggs
  • 2 tsp vanilla
  • 2 cups chopped apples
  • 1 cup chopped pecans
  • 1/2 cup raisins
  • 1/2 cup Apple Jack Brandy
  • 1/2 cup Apple Juice
  • 1/2 cup brown sugar
  • 2 tbls butter

Preparation

Step 1

In large bowl, beat on high, sugar, oil, eggs and vanilla.. Combine flour, baking powder, salt and nutmeg and gradually add to mixture, beating until smooth. Stir in apples, pecans and raisins. Pour into a 20" greased tube pan. Bake at 325° for 1 hr and 15 min. Cool 10 min and remove from pan.

Icing:
Combine and bring to a boil, stirring until sugar is dissolved. Cook 4 minutes. Prick top of cake mixture.
