Ingredients

  • 2 20 oz. cans chunk pineapple, unsweetened (drain and reserve liquid)
  • 2 cups grated cheddar (8 oz)
  • 3 tbsp flour
  • 1 stick melted butter
  • 1 cup sugar
  • 4 tbsp pineapple juice
  • 1 cup Ritz cracker crumbs

Step 1

DIRECTIONS:
Mix sugar and flour together and stir in pineapple juice. Mix pineapple, cheese, melted butter, and sugar mixture together. Bake in a large casserole dish at 350 deg. for 20 minutes; lower to 300 deg. and bake 20 minutes longer. Remove from oven, top with cracker crumbs and return to oven long enough to heat crumbs. Serve warm. Yields 1½ - 2 qt. dish. This casserole is very good served with ham or barbecue chicken.
