Ingredients
- 4 cups apple or pear juice
- 1 cinnamon stick
- 3 black peppercorns
- 3 cloves
- 6 cardamon pods, crushed (1/2 tsp of seeds)
- 4 slices ginger
- 4 pears, peeled

Preparation
Step 1
Combine all ingredients in a pot. Place parchment paper on top of pears to keep them submerged. Bring to a boil and then turn down the a simmer. Cook for about 10 minutes if pears are ripe, or longer if they are firm. They are done when they are tender and a knife or bamboo skewer inserted slides out easily. Remove from heat and let cool before refrigerating.
Liquid can be reduced to form a syrup. To serve, cut in half and scoop out the seeds with a small spoon, slice or quarter. These keep in the fridge for 5 days or so.
