Quinoa Salad with Apples and Walnuts

Quinoa is such a delicious protein-rich grain I'm always looking for more ways to enjoy it. Since I also like the Waldorf Salad combo of apples, celery, and walnuts, this delicious salad was inevitable.

Ingredients

  • 1 cup quinoa, thoroughly rinsed
  • 2 Gala or Fuji apples, cored and chopped
  • 2 tsp freshly squeezed lemon juice
  • 1/2 cup chopped celery
  • 1/2 cup walnut pieces, toasted
  • 2-3 Tbsp minced red onion
  • 1/4 cup chopped fresh parsely
  • 3 Tbsp olive oil
  • 1 1/2 Tbsp sherry vinegar
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • optional: add cranberries

Preparation

Step 1

1. Bring 2 cups of salted water to a oil. Add the quinoa, reduce the heat to low, cover, and simmer until the water is absorbed, 20 minutes. Drain any remaining water. Transfer to a serving bowl.

2. While the quinoa is cooling, combine the apples and lemon juice in a large bowl and toss to coat. Add the celery, walnuts, onion, and parsely.

3. In a small bowl combine the oil, vinegar, sugar, salt and pepper. Ad the quinoa to the salad mixture and pour on the dressing. Toss well to cob=mbine. Taste and adjust the seasonings. Serve immediately, or cover and refrigerate until read to use.
