Ingredients

  • Meringue ingredients:
  • 5 egg yolks
  • 1 cup sugar
  • 3 tsp corn starch
  • 3 tsp flour
  • 3 tsp vanilla
  • 1 12oz can evaporated milk
  • 12 oz whole milk
  • 1/4 cup margarine
  • 1 cup shredded coconut
  • 1 10 inch pie shell
  • 5 egg whites
  • 1 dash of cream of tartar
  • 1/4 cup sugar

Preparation

Step 1

Bake pie shell per package instructions. Mix all ingredients except coconut and bring to a slow boil. Cook until thickned. Blend in coconut and pour into pie shell. Save a small amount of coconut for sprinkling over meringue.
Meringue:
Beat egg whites on high until fluffy. Add cream of tartar and sugar gradually while continuing to beat. Spread over pie and sprinkle remainder of coconut over meringue. Bake in 4oo degree oven until meringue is slightly browned.
