Ingredients
- 1 pound red potatoes, cut into 1 inch cubes
- 1/2 cup onion, chopped
- 24 ounces frozen corn
- 3 cups chicken broth
- 1 teaspoon pepper
- 2 cups half & half
- 2 tablespoons cornstarch
- 1/2 pound bacon, crisply cooked and chopped

Preparation
Step 1
Add potatoes, corn, onion, broth, salt, & pepper to crockpot.
Cover and cook on high 3 to 4 hours.
In a small bowl, mix half & half and cornstarch, whisking until smooth.
Add half & half mixture and bacon to crockpot.
Cover and cook another 10 to 15 minutes, or until sauce is thickened.
Serve and enjoy!
