Great Northerns with Leeks and Bacon

Ingredients
- 2 cups dried Great Northern beans
- 4 slices thick sliced bacon, diced
- 2 Tbls. extra-virgin olive oil
- 6 leeks, thinly sliced
- 2 garlic cloves, minced
- 1 tsp. salt
- Pepper

Preparation
Step 1
Soak beans overnight. Cover with fresh water and bring to a boil then simmer. Cook until tender 45 min. to 1 hour.
Cook bacon in skillet until crisp. Remove from pan, add olive oil to bacon drippings and cook leeks and garlic about 10 min. Add to beans with crumbled bacon and salt and pepper. Serve hot.
