Garlic Mushroom Appetizer

Ingredients
- 1 C. Chopped Onion
- 1/2 C. Vegetable Oil
- 3 Tbsp. Butter
- 2 lb. Fresh Mushrooms, sliced
- 1 Can ( 28-oz. ) Crushed Tomatoes in Puree, undrained
- 1 tsp. Salt
- 1/4 tsp. Pepper
- 1/2 C. Red Wine Vinegar
- 1 Bunch Fresh Parsley, finely chopped ( about 11/2 C. )
- 3 Garlic Cloves, minced
- Sliced French Bread

Preparation
Step 1
In a lg. saucepan, saute onion in oil & butter till tender-crisp. Add mushrooms; cook for 2 min. or till vegetables are tender. Add the tomatoes, salt & pepper; cover & simmer for 20-30 min. Stir in the vinegar, parsley & garlic. Cover & simmer for 10 min. Cover & refrigerate for several hours or overnight. To serve, spoon onto slices of french bread.
