Cauliflower Fried Rice

Make your favorite fried rice with no grains with this cauliflower fried rice! Add other ingredients that you like in your fried rice, like some barbecue pork or chicken.

Ingredients
- 1 medium head cauliflower, rinsed, about 24 ounces
- 1 tablespoon sesame oil
- 2 egg whites
- 1 large egg
- Pinch of salt
- Cooking spray
- 1/2 small onion, diced fine
- 1/2 cup frozen peas and carrots
- 2 garlic cloves, minced
- 5 scallions, diced, whites and greens separated
- 3 tablespoon soy sauce, or more to taste (Tamari for Gluten Free)

Preparation
Step 1
Remove the core from the cauliflower head and let it dry. Cut into pieces that can be put through a ricer. Steam until al dente -- still a little firm. Put the cauliflower in a ricer to make it like 'rice'
Combine the egg and egg whites. Coat the cauliflower rice in the egg mixture.
Heat a large skillet with cooking spray. Add the cauliflower, onion, peas and carrots, garlic and scallions and stir until the egg is cooked. When cooked, add the soy sauce. Enjoy!
