Ingredients

  • 3/4 cup vegetable oil
  • 1/4 cup white wine vinegar
  • 2 tbsp white wine
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp dry mustard
  • 1/2 tsp curry powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 bunch fresh spinach
  • 1/4 cup purple onion
  • 4 slices bacon, cooked and crumbled
  • 2 hard cooked eggs, chopped

Preparation

Step 1

In large bowl whisk together oil, vinegar, white wine, soy sauce, sugar, dry mustard, curry, garlic powder, salt and pepper. Wash spinach well and tear leaves into bite size pieces. Place spinachin large salad bowl, tss with chopped purple onion. Garnish with onion slices and pour dressing over all.

Sprinkle chopped eggs and crumbled bacon over salad.
