Ingredients
- SPECIAL EQUIPMENT:
- 2 large eggs
- 2 tablespoons water
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 2 teaspoons butter
- 1/2 cup Colby Jack cheese, shredded
- 1 cup lettuce, shredded
- 4 tablespoons salsa
- 2 tablespoons sour cream, optional
- 2 sprigs fresh cilantro, optional for garnish
- 10 inch non-stick pan

Preparation
Step 1
Put the eggs, water, salt and pepper in a bowl and whisk until frothy.
Melt 1 teaspoon of the butter in the pan over medium-high heat, pour in half of the egg mixture and let cook for 1 to 2 minutes. Turn the egg wrap over and let cook for another minute until done.
Remove from heat, sprinkle with half the cheese, lettuce, salsa and sour cream and roll up like a burrito. Serve hot garnished with a sprig of fresh cilantro if desired. Repeat the process with the remaining ingredients to make a second wrap.
