  • 3 fully ripe bananas(about 3)
  • 1 cup unsweetened applesauce
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup chopped pecans or walnuts

Preparation

Step 1

grease a 9 x 9 x 2 baking pan. preheat oven to 350.

whirl bananas in container of electric blender to make 1 cup of puree. add 1 cup vegetable oil and 2 eggs. whirl until well blended.

sift 1 1/2 cups flour, 1 cup sugar, 1 tsp baking soda and 1/2 tsp salt into medium-size bowl. pour banana mixture all at once into dry ingredients; mix just until blended. stir in nuts.

pour into prepared pan, rap on table to remove any large air bubbles.

bake for 45 minutes or until center springs back when touched. cool before serving.
