Shepherd's Pie Potato Skins

Shepherd’s Pie – in potato skins! It takes just 15 minutes to prepare by popping into the oven to get those gor
- 1/2 pound ground beef
- 1 tablespoon olive oil
- 1/2 onion, diced (white or yellow)
- 1 clove garlic, minced
- 1 1/2 cups frozen mixed vegetables (pea, corn, carrots or fresh)
- 2 tablespoons flour
- 1 cup beef stock or broth or 1 bouillon cube dissolved in hot water
- 1/2 cup water
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Black pepper, to taste
- 4 large potatoes, scrubbed clean
- 3/4 cup milk, full or low fat
- 2 tablespoon butter, optional but highly recommended
- Salt, to taste
LOADED POTATO SKINS

These are a great snack. I like to make them when I have too many small potatoes hanging around
- 6 small Idaho baking potatoes
- 2 - 3 tablespoons vegetable oil
- 1/4 teaspoon paprika
- 1 1/2 cups grated cheddar cheese
- 1 cup finely chopped red peppers, green peppers or yellow peppers (or a combination)
- 1/2 cup finely chopped chives or 1/2 cup green onions
- 1 clove garlic, crushed
- 1 teaspoon mustard
- 1 teaspoon hot sauce
- 3 tablespoons sour cream
- 1 egg
- 8 slices of cooked and crumbled bacon
