BANANA-WALNUT CHOCOLATE-CHUNK COOKIES

If you are tired of banana bread this is a wonderful way to use them
- 1 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 1 teaspoon course salt
- 1/2 teaspoon baking soda
- 3/4 cup (1 1/2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed light-brown sugar
- 1 large egg
- 1 1/2 teaspoons pure vanilla extract
- 1/2 cup mashed ripe banana (about 1 large)
- 1 cup old-fashion rolled oats
- 8 ounces semisweet chocolate, coarsely chopped into 1/4 inch chunks
- 1/2 cup coarsely chopped walnuts (about 2 ounces), toasted

Chile-Garlic Shrimp

This is so easy and so good!!! add brown or red rice to make it really a meal
- 2 teaspoons extra-virgin olive oil (preferably Spanish)
- 10 cloves garlic, thinly sliced
- 2 lbs large shrimp, shelled and deveined
- 2 dried red chiles (plus more for garnish, if desired)
- 2 teaspoons brandy
- 2 teaspoons chopped fresh parsley
Broccoli Slaw

This is a great potluck or party salad
- 2 3 oz pkg. Ramen Noodles, broken
- 5 cups broccoli florets
- 1 cup sliced celery
- 1 medium red onion or onion, cut into slivers
- 1/2 cup sugar
- 1/2 cup salad oil
- 1/2 cup cider vinegar
- 1/4 cup slivered almonds, toasted
- 1/4 cup shelled sunflower seeds

- •1-1/2 cups graham cracker crumbs
- •Sugar substitute equivalent to 1/2 cup sugar, divided
- •6 tablespoons butter, melted
- •2 packages (8 ounces each) reduced-fat cream cheese
- •3 cups cold fat-free milk, divided
- •2 packages (1 ounce each) sugar-free instant butterscotch pudding mix
- •1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
- •1/2 teaspoon rum extract

- Pie Dough:
- 2 1/2 cups all purpose flour
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 12 tablespoons butter, cold and cubed
- 1/4 cup vegetable shortening, cold
- 1/4 cup to 1/2 cup ice water
- Pie Filling:
- 8 cups Granny Smith Apples; cored, peeled and sliced into 1/4" slices
- 1/2 cup apple butter
- 2 tablespoons lemon juice
- 3/4 cups sugar
- 7 tablespoons all purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 2 tablespoons unsalted butter, cut into small pieces
- Egg Wash:
- 1 large egg yolk, beaten with 2 tablespoons milk

Almond Crusts Pre-Heat the oven to 350
- Almond Crust
- 1 1/2 cups almond meal or almond flour
- 3 tbsp melted butter
- 3 tbsp Splenda sugar blend
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- Filling
- 1 (4 ounce) bar white chocolate, chopped
- 1/2 (8 ounce) package of Philidelphia cream cheese, room temperature
- 1/2 cup Daisy Lite sour cream, room tempature
- 1 (22 ounce) can Blueberry pie filling
- 1 (8 ounce) container frozen non dairy Cool whipped topping lite or sugarfree, thawed and divided
Pear Butter

This is another one to use up those pears!!! it is really good!!
- 4 to 5 lbs chopped Bartlett pears, do not peel or core them (remove any bruised or damaged parts)
- 1 star anise
- 2 Tbsp chopped fresh ginger
- 2 cups water
- 1 cup lemon juice
- 3-4 cups sugar
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground nutmeg
- 1 teaspoon lemon zest
- A wide 8-quart, thick-bottomed pan
- A food mill or chinois
- A large (8 cup) measuring cup
- 6-8 8-ounce canning jars, lids, and rings
CARROT CAKE RECIPE

- Butter for pans
- 2 cups of flour, plus more for pans
- 2 cups of sugar
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 4 eggs, room temperature
- 1 1/2 cup vegetable oil
- 3 cups grated carrots
- 1 1/2 cups chopped pecan, optional
- FROSTING
- 2 8oz packages of cream cheese, room temperature
- 1 stick salted butter, room temperature
- 1 (16 oz) box powder sugar
- 1 tsp vanilla extract
- 1/2 cup chopped pecans
Irish Tea Cake

- 1 3/4 cups cake flour
- 3/4 cup butter, at room tempature
- 1 cup sugar
- 2 large eggs
- 2 tsp pure vanilla extract
- 2/3 cups buttermilk
- 1 1/4 tsp baking powder
- 1/4 tsp salt
- 3 oz cream cheese, at room tempature
- 1 cup dried currants (or Dates)
