Chicken-and-Avocado Soup with Fried Tortillas

Here's a silky soup that doesn't rely on cream for its creamy texture; pureed avocados do the job nicely
- 3 1/2 tablespoons cooking oil
- Four 6-inch corn tortillas, halved and cut crosswise into 1/4-inch strips
- 1 clove garlic
- 1 jalapeno chile, seeds and ribs removed
- 2 ripe avocados, preferably Haas, skin and pit removed
- 1 tablespoon lime juice
- 1/4 teaspoon tabasco sauce, plus more to taste
- 3 1/2 cups water
- 1 1/2 teaspoons salt
- 1/4 teaspoon fresh-ground black pepper
- 1 onion, chopped
- 3 cups canned low-sodium chicken broth or homemade stock
- 1 pound boneless, skinless chicken breasts (about 3), cut into approximately 1 1/2-by-1/4-by-1/4-inch strips

- 4 teaspoons Dijon mustard
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon kosher salt

- 20 oz can of crushed pineapple, drained
- Cream Cheese (8 oz) softened
- Instant pudding, (3 oz) vanilla
- 1 C. cold milk
- Topping: 2 cups whipped topping, coconut or chopped nuts

- Kathy's Favorite Hearty Whole Wheat Bread
- 1 1/3 Cups Milk
- 1/3 cup honey
- 3 tab. Butter
- 2 tab. Sugar
- 1 ½ tsp. Salt
- 1 C. white flour
- 2 C. whole-wheat flour
- ¼ C. cornmeal
- 2 tab. Wheat gluten
- 1 package (1/4 oz) dry yeast
- Put all ingredients carefully and accurately into the bread maker in the order listed. I have put the dry ingredients minus the yeast into canning jars, tightly sealed and added the milk and honey as I was making the bread.

- 1 whole chicken (3 1/2 to 4 pounds), cut into 10 pieces
