Rice With Sour Cream And Green Chilies

Cook rice according to package directions
- 1 cup of regular rice
- 1 can of green chilies, chopped and drained
- or 1 bag of frozen chilies, peeled and seeded
- lb. Monterey Jack or cheddar cheese, shredded
- 1 cups dairy sour cream
- Salt & Pepper to taste
- 2 tablespoons butter or margarine
Soba Noodle Bowl

Directions 1. In a large saucepan, bring broth and 1 cup of water to a boil

- 2 14-oz. cans reduced-sodium chicken broth
- 2 6-oz. skinless, boneless chicken breast halves
- 2 medium carrots, thinly bias-sliced
- 6 oz. soba (buckwheat noodles)
- 1 red or green jalapeño pepper, thinly sliced and seeded
- 2 Tbsp. reduced-sodium soy sauce
- 8 oz. fresh sugar snap peas
- Crushed red pepper (optional)
- Snipped fresh parsley (optional)

Directions Cook the spaghetti according to the package directions
- 4 ounces spaghetti (1/4 box)
- 1 teaspoon olive oil
- 6 ounces ground beef
- 1/2 onion, chopped
- 1 14-ounce can diced tomatoes
- 2 teaspoons chili powder
- kosher salt and black pepper
- 8 hard taco shells
- grated Cheddar, sour cream, and cilantro, for serving

Directions 1. Put the chicken pieces in a large bowl and cover with water

- 1/4 teaspoon salt
- 1/8 teaspoon ground cloves
- 2 eggs, lightly beaten
- 2/3 cup milk
- 1/2 cup whipping cream
- 1/2 teaspoon vanilla
- 1 Hazelnut Mousse (recipe below)

- 3 large carrots, sliced

Maytag Blue Cheese Dip Makes 2 cups 8 oz
- Maytag Blue Cheese Dip
- Makes 2 cups
- 8 oz. cream cheese, softened
- ¼ cup sour cream, light
- 4 oz. of Maytag or other blue cheese, crumbled
- 2 scallions (white & tender green parts) finely chopped
- Ground pepper to taste
- Combine cream cheese, sour cream, and whipping cream. Add blue cheese and scallions. If a thinner dip is desired, add more cream. Add pepper to taste
