Granola Bars

*Preheat your oven to 400 degrees
- 2 cups oats (sometimes I substitute Multi-Grain Cheerios)
- 3/4 cup wheat germ
- 1 cup crushed peanuts

- 2/3 cup brown sugar
- 1/3 cup honey
- 4 T Smart Balance
- 2 tsp vanilla
- 1/4 tsp Kosher salt
- 6-8 oz dried fruit (your choice)
- 1/3 cup mini semi-sweet chocolate chips
Blueberry Peach Buckle

*Grease an 8-inch baking dish and preheat your oven to 350
- Topping--
- 1/3 cup butter, cut into small pieces
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour
- 1 tsp cinnamon (I used two)
- 1 tsp fresh ginger (I did not use ginger at all)

- 1 1/2 cups flour
- 1/2 tsp baking powder
- pinch of salt
- 3/4 cup butter, room temperature
- 3/4 cup brown sugar

Whole Wheat Banana Cake

*Preheat oven to 350 degrees and grease a 9x13-inch baking pan
- 1 1/2 cups King Arthur white whole wheat flour
- 1 cup brown sugar
- 1 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup mashed bananas (about 3)
- 1 egg
- 1/2 cup butter, melted (Smart Balance stick)
- 1/4 cup milk (skim is fine)
- 1/2 cup mini chocolate chips (optional)
Blackberry Pork Loin

- 1/2 cup whole wheat flour
- 1 1/2 cups white flour
- 1 tsp baking soda

- 3/4 cup brown sugar
- 2 eggs (or egg substitute)

- For the crust:
- 1 1/2 sticks cold, diced butter (Smart Balance)
- 2 cups flour (calls for all-purpose, but I used white whole wheat)
- 1/4 cup brown sugar
- 1/4 cup powdered sugar (you'll need more for dusting later)
