Fluffy Lemon Cake

*Preheat your oven to 350 degrees
- 2 cups cake flour
- 1 1/4 white sugar
- 3 tsp baking powder
- 1/4 tsp salt
- 3 egg whites
- 1 cup milk (skim is fine)
- 1 tsp lemon extract
- zest from one lemon (minus 1 tsp)
- 1/2 cup butter, melted but cool
- ********************
- 1 cup powdered sugar
- 1 tsp lemon extract
- 1 tsp lemon zest
- milk (amount varies--enough to make thin icing)
Beanless Chili

*Add meats, chopped green pepper, onion (any kind--I used a red onion because that's what I had in the veggie drawe...
- 2 lbs lean ground beef
- 1 lbs lean beef for stew
- 1 green pepper
- 1 onion
- 1 can mild (or medium or hot) diced tomatoes with green chilies
- 1 small can tomato paste
- 1 tsp cinnamon
- 2 tsp chopped garlic
- 2 bay leaves
- 2 tsp Worcestershire sauce
- 1 tsp salt (more to taste)
- 1 tsp red pepper (optional)
- 1/4 cup ketchup (optional--I used low sugar ketchup)
- ground cumin to taste
- chili powder to taste
Italian Chicken

*Heat an electric skillet to 325 degrees
- 4 boneless, skinless chicken breats
- 1 package Italian bread crumbs (I used Panko)
- 1 egg
- 1 T lemon juice (fresh)
- 1 tsp lemon zest (optional)
- 1/2 cup white cooking wine
- 1/2 cup water
- 1/2 tsp garlic salt
- 1 tsp parsley flakes
- 1 tsp chicken bullion or one cube
- 2 T oil for frying pan
Country Chicken Casserole

*Preheat your oven to 375 degrees
- 3 cups frozen shredded hash browns
- 1 small can of fried onions
- chedder cheese (I measure by handfuls)
- 4-6 (depending on size) cooked chicken breasts, shredded
- 1 can 98% fat-free condensed cream of chicken soup
- 3/4 cup skim milk
- 1 can low sodium corn
- 1/2 to 3/4 cup frozen sweet peas
- salt to taste
Slow Cooker Applesauce

- 8 whole apples, peeled and cubed

- 1/2 cup water

Chocolate Fudge Pie

(To bake a pie crust, put it into the pie tin and poke it with holes
- 1 baked pie crust
- 3/4 cup brown sugar
- 1/4 cup flour (white whole wheat)
- 3 T cocoa powder
- 1/2 cup (one stick) Smart Balance, softened
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
Slow Cooker Potatoes Au Gratin

1. Wash, peel, and slice your potatoes
- 6 medium potatoes (I used Yukon Gold)
- 8 oz cheese, shredded
- 3 T butter
- 1/4 cup flour
- 2 cups milk (skim is fine)
- garlic (optional)
- salt (not optional)
Pumpkin Pies

*Preheat oven to 425. * Sprinkle a little flour into your pie plates and then line with the crusts
- 1 1/2 cups brown sugar (dark or light)
- 3 1/2 tsp cinnamon
- 1/2 tsp ginger (I'm not a ginger fan--feel free to double this amount)
- 4 eggs
- 2 cans Libby's pure pumpkin
- 1 12oz can evaporated milk
- 1 14oz can condensed milk
- 2 unbaked pie crusts
Millionaire's Shortbread

*Preheat oven to 350 and grease a 9-inch square baking dish
- 1 1/2 sticks butter (the real thing, no Smart Balance today)
- 1/4 cup sugar
- 1/2 tsp vanilla
- 1 1/2 cups King Arthur all-purpose flour (no white whole wheat today either)
- 1/8 tsp salt

- 14 oz Dulce de Leche
- ******************
- 6 oz. semi-sweet chocolate

*Put the 2T of oil in a large skillet and add the chicken
- 2 T oil
- 2 T butter (Smart Balance)
- 4-6 boneless, skinless chicken breasts (I cut mine into thirds)
