Caprese Salad

Tomatoes filled with mozzarella slices and basil leaves make for a beautiful presentation and are easy to serve
- Ingredients:
- 8 tomatoes
- 4 balls fresh mozzarella cheese, about 3/4 lb.

- 32 fresh basil leaves
- Extra-virgin olive oil for drizzling
- Balsamic vinegar glaze for drizzling
- Sea salt and freshly ground pepper, to taste
White Chocolate Snowballs

1.Heat oven to 375° F. Line 2 baking sheets with parchment paper or aluminum foil
- 2 sticks unsalted butter, at room temperature
- 1 cup packed dark brown sugar
- 1/2 cup granulated sugar
- 2 tablespoons corn syrup
- 1 teaspoon vanilla extract
- 1 large egg
- 2 3/4 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 1 1/4 teaspoons baking soda
- 1 7-ounce bag sweetened flaked coconut
- 12 ounces white chocolate (chopped or chips)
Donut Cake Pops

- For the Sauce:
- 1/2 cup mayonnaise
- 1 tablespoon plus 1 teaspoon Asian chili sauce (such as sambal oelek)
- 2 teaspoons honey
- Kosher salt
- For the Shrimp:
- Vegetable oil, for frying
- 2 large eggs
- 3/4 cup all-purpose flour
- 1/2 cup cornstarch
- Kosher salt and freshly ground pepper
- 1 1/4 pounds small shrimp, peeled and deveined
- Bibb lettuce leaves, for serving

Lemon Sandwich Cookies

These lemon sandwich cookies are unique, sophisticated, delicious, and very easy to make
- Creamy Lemon Filling:
- 16 tablespoons (2 sticks) unsalted butter, room temperature
- 1 cup confectioners' sugar
- 1 tablespoon finely grated lemon zest (from 1 lemon)
- 1/2 teaspoon salt
- 2 cups all-purpose flour (spooned and leveled), plus more for rolling
- 2 tablespoons granulated sugar, for sprinkling
- 1 package (4 ounces) cream cheese, room temperature
- 1 tablespoon finely grated lemon zest (from 1 lemon)
- 1 to 1 1/2 cups confectioners' sugar
- Directions
- 1 .In a small bowl, mix cream cheese and zest until smooth. Gradually add 1 cup confectioners' sugar, mixing until smooth. Mix in remaining sugar as necessary to create a firm but spreadable filling.

- For the shells:
- 90 gr egg whites (preferably aged overnight in the fridge or on your countertop if the kitchen is relatively cool)
- 30 gr granulated sugar
- 200 gr powdered sugar
- 55 gr almonds
- 55 gr raw pistachios
- powdered green food coloring (I only used a tiny amount to bump up the green from the nuts)
- For the creme brulee filling:
- 1/2 cup (125ml) whole milk
- 1/2 cup (125ml) heavy cream
- 1/2 vanilla bean, seeded (see note)
- 1/4 cup (50gr) sugar
- 2 egg yolks
