Whole30 Apple Cider Chicken

Make this high-carb meal with a side of your favorite steamed veggies
- 1 tsp olive oil
- 1 1/2 chicken breasts
- 2 slices turkey bacon, diced
- 1/4 cup apple, cored and diced
- 1/2 tsp dried thyme
- 1 pinch salt and pepper
- 2 tbsp. apple cider
- 2 tbsp. chicken broth
- 1 tsp. butter
- 1 cup brown rice
Butterscotch Banana Trifle

Fill a large bowl with ice, top with a medium bowl and a fine-mesh sieve
- 1 1/2 c. whole milk
- 1/3 c. all-purpose flour, spooned and leveled
- 6 large egg yolks
- 5 tbsp. unsalted butter
- 3/4 c. packed dark brown sugar
- 1 tsp. Kosher salt
- 1 1/2 c. half-and-half
- 2 tsp. pure vanilla extract
- 6 medium ripe bananas (about 2 lbs.)
- 1 tbsp. fresh lemon juice
- 1 (1-lb.) loaf pound cake, cut into 3/4" cubes
- 2 c. Sweetened whipped cream
- Banana chips and broken toffee candy, for garnish
Stuffed Italian Bread

Preheat the oven to 350 F
- 1 Italian loaf, about 12 inches long
- 1 stick butter, melted
- 1/8 cup olive oil
- 3 tsp minced onion
- 2-3 cloves garlic, grated
- 1 tbsp dijon mustard
- 1 tbsp poppy seeds
- 3 tsp chopped parsley (add more if you wish)
- 12 oz grated cheese (I used a mix of white cheddar and Monterey jack.)
Santa Fe Spinach Dip Recipe

In a large nonstick skillet coated with cooking spray, saute onion until tender
- 1 medium onion, chopped
- 1 can (14-1/2 ounces) diced tomatoes with mild green chilies, drained
- 2 garlic cloves, minced
- 1 package (8 ounces) cream cheese, cubed
- 1 cup (4 ounces) shredded white cheddar cheese
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
- 1 cup (4 ounces) shredded Monterey Jack cheese
- 1 cup refrigerated Alfredo sauce
- 1 package (10 ounces) frozen leaf spinach, thawed and squeezed dry
- 1 tablespoon lime juice
- 1/2 teaspoon Cajun seasoning
- 2 tablespoons sour cream
- Tortilla chips

- 1 medium onion, thinly sliced

- 1/2 water
- 1 cup sour cream

- 1 box instant chocolate pudding mix

Chicken & Sauce Combine garlic, lemon juice, rosemary and chicken slices in a mixing bowl
- 1/4 cup extra virgin olive oil
- 1 small Vidalia onion, chopped
- 1 red bell pepper, julienned
- 1/2 zucchini, julienned
- Salt to taste
- 4 chicken breasts, sliced in 1⁄2” strips
- 2 small branches rosemary
- 1 garlic clove, minced
- Juice of 1⁄2 lemon
- Veronese Sauce
- 1 cup Parmesan cheese, grated
- 1 ⁄2 cup ricotta cheese
- 14 oz. heavy cream
- Gnocchi
- 1 lb. gnocchi (potato dumplings), cooked according to package directions
