- 1/4 cup plus 2 tbsp. olive oil
- 3 tbsp. apple cider vinegar
- 1 1/2 tbsp. lemon juice (about 1/2 lemon)
- 1 1/2 tbsp. honey
- 1 1/2 tbsp. Dijon mustard
- 1 1/2 tsp. salt

- 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
- 1 cup plus 1 Tbsp. milk, divided
- 1 Tbsp. sugar
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
- 1 ready-to-use graham cracker crumb crust (6 oz.)
- 1 can (15 oz.) pumpkin
- 2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- Note: make your own pie crust; cutting back on sugar or using sugar substitute. Also use reduced fat cream cheese as well as sugar-free pudding.

- 3/4 cup ketchup
- 3/4 cup reduced-sodium soy sauce
- 1/3 cup sherry or chicken broth
- 2-1/2 teaspoons minced fresh gingerroot
- 1-1/2 teaspoons minced garlic
- 24 boneless skinless chicken thighs (about 5 pounds)

- 2 pounds small beets (preferably Chioggia), 1/4 pound peeled and very thinly sliced on a mandoline
- 3/4 cup extra-virgin olive oil, plus more for rubbing
- Salt and freshly ground black pepper
- 1/4 cup fresh orange juice
- 1/4 cup white balsamic vinegar
- 3 bunches watercress (6 ounces each), thick stems discarded
- 6 ounces young Pecorino cheese, such as Toscano or Sardo, shaved

Preheat oven to 500 degrees
- 2 yellow bell peppers, cut into chunks
- 2 red bell peppers, cut into chunks
- 2 green bell peppers, cut into chunks
- 3 zucchini, sliced lengthwise
- 2 bunches green onions, trimmed
- 2 Japanese eggplants, sliced
- 24 asparagus spears, trimmed
- 1 lb. new potatoes, thinly sliced
- 8 oz. mushrooms, halved
- 1 bunch fresh rosemary, chopped
- 12 garlic cloves, chopped
- 1/4 cup extra virgin olive oil
- salt and pepper to taste
Butter Cookies

Blend together butter, sugar, egg, evaporated milk and vanilla; mix well
- 3/4 cup butter, softened
- 1 cup sugar
- 1 egg, beaten
- 2 tbsp. evaporated milk
- 1 tsp. vanilla
- 3 cups flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
Roasted Chicken Blend

Combine ingredients and rub mixture over whole chicken ; roast 50 min
- 1 tsp onion salt
- 1 tsp paprika
- 1/2 tsp thyme
- 1/2 tsp garlic powder
- 1/2 tsp pepper
- 1/4 tsp salt,sugar and sage
- pinch white pepper and ground red pepper
