Corn Casserole

Combine all ingredients and pour into a greased casserole dish
- 1 can whole kernel corn, drained
- 1 can creamed corn
- 2 eggs beaten
- 1 stick butter, melted
- 4 heaping T. all purpose flour
- 2 T. sugar
- 1/4 C. diced green pepper (you can use red, I only had green)
- 1 C. whole milk
- 1/2 C. shredded cheddar cheese
- 1/4 tsp each salt and pepper
Chicken & Spinach Pasta Bake

Preheat oven to 400 degrees
- Ingredients:
- Yields 6 - 8 servings.
- 10 ounces dry pasta (I used a combination of rotini, farfalle and penne. Any similar size would work.)
- 2 tablespoons butter
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 4 ounces chive and onion cream cheese
- 1 cup sour cream (or plain Greek yogurt)
- 1 cup whole milk, heavy cream or half-and-half (I used half-and-half)
- 1/2 cup shredded or grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Pinch crushed red pepper flakes (optional)
- 1 - 1 1/2 cups chopped fresh spinach
- 2 cups cooked chicken (cubed or shredded)
- 1/2 cup fresh tomatoes, cut into large chunks (I used grape tomatoes sliced in half)
- Fresh basil or parsley, for garnish
Crock-Pot Lemonade Moonshine

In crock-pot, add water , sugar and lemon juice
- 5 Lemons, juiced
- 6 Cups of Water
- 2 Cups of White Sugar

Honey teriyaki chicken wings. The perfect game day recipe!

let's do it Place rack in center of the oven then preheat to 375 degrees
- 4 –5 lbs chicken wings, rinsed and dried
- salt and pepper
- 2 1/2 tsp baking powder
- 1 cup low-sodium soy sauce
- 1/2 cup orange juice (freshly squeezed if possible)
- juice of 1 lemon
- 1 Tbsp minced garlic
- 2 Tbsp freshly grated ginger
- 1/2 cup honey
- 3 Tbsp rice vinegar
- 1/4 cup brown sugar (light or dark)
- 1/2 tsp red pepper flakes (or more to taste)
- 1/4 cup water
- 2 Tbsp cornstarch
Seafood Gumbo

Preheat a Dutch oven over medium heat
- 1 lb Andouille Sausage, cut crosswise into 1/4 inch thick slices
- 3 Cups Okra, cut into 1/2 inch slices
- 1 Cup Vegetable Oil/Butter/Shortening
- 1 Cup Flour
- 1 Large Onion, finely diced
- 1 Large Bell Pepper, finely diced
- 2 Celery Stalks, finely diced
- 1 Tablespoon Creole Seasoning
- 1 14.5 oz Can Petite Diced Tomatoes
- 10 Cups Seafood Stock
- 1 lb Lump Crab Meat
- 1 lb Medium Shrimp, peeled and deveined
- 1 lb Crawfish Tail Meat
- Hot Cooked Rice
- Scallions, sliced
FALL DIP

Mix everything together and then add some pumpkin pie spice
- {Cool Whip, vanilla pudding mix, and a can of pumpkin}
- I make this every year. You use 16 oz of cool whip, 3 small boxes instant vanilla pudding *** dry mix only*** DON'T make the pudding*** , one small can of pumpkin.
Skinny Shake

- 3/4 cup Almond milk
- 15 about 15 ice cubes
- 1/2 tsp Vanilla
- 1-2 Tbsp unsweetened Cocoa powder
- 1/3 of a Banana

Marinated Cucumbers, Onions, and Tomatoes

Combine ingredients in a large bowl and mix well
- 3 medium cucumbers, peeled and sliced 1/4 inch thick
- 1 medium onion, sliced and separated into rings
- 3 medium tomatoes, cut into wedges
- 1/2 cup vinegar
- 1/4 cup sugar
- 1 cup water
- 2 teaspoons salt
- 1 teaspoon fresh coarse ground black pepper
- 1/4 cup oil
Sweet Tea-Brined Fried Chicken

- 2 family-size tea bags
- 1/2 cup firmly packed light brown sugar
- 1/4 cup kosher salt
- 1 small sweet onion, thinly sliced
- 1 lemon, thinly sliced
- 4 garlic cloves, halved
- 1 tablespoon cracked black pepper
- 2 cups ice cubes
- 1 (3 1/2-lb.) cut-up whole chicken
