Oysters with Brown Sugar–Chipotle Butter

Mix garlic, chile, butter, bourbon, and brown sugar in a small bowl until smooth; season with salt and pepper

- 1 garlic clove, finely chopped
- 1/4 canned chipotle chile in adobo, finely chopped (about 1 teaspoon)
- 2 tablespoons unsalted butter, room temperature
- 1 1/2 teaspoons bourbon
- 1 1/2 teaspoons light brown sugar
- Kosher salt, freshly ground pepper
- 2 dozen oysters (such as Blue Point, Well Fleet, or Malpeque), freshly shucked, on the half shell, with liquor

Directions Place a grill pan over medium-high heat or prepare the barbecue (medium-high heat)
- Olive oil
- 3 firm but ripe peaches, pitted, quartered
- 2 tablespoons sugar

Pan-Fried Chorizo Burgers with Avocado, Fried Eggs and Spicy Mayo

A riff on a breakfast plate, these burgers get a wonderful spicy flavor from an even mix of ground beef and chorizo
- 1/2 lb. fresh chorizo, casings removed
- 1/2 lb. ground beef
- 1 tsp. ground cumin
- 1/2 tsp. ground coriander
- 2 tbsp. finely chopped cilantro
- 2 cloves garlic, finely chopped
- Kosher salt and freshly ground black pepper, to taste
- 1/2 cup mayonnaise
- 1 1/2 tbsp. hot sauce, preferably Cholula
- 1 tsp. fresh lime juice
- 2 tbsp. olive oil
- 4 slices pepper jack cheese
- 4 hamburger buns, lightly toasted, for serving
- Lettuce leaves, and sliced tomatoes, for serving
- 1 ripe Hass avocado, pitted, peeled, and thinly sliced, for serving

- 3/4 cup light brown sugar, packed
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon pure vanilla

- 10 ounce bag chocolate chips

Chipotle-Bourbon Mayo In a bowl mix together the mayo, chipotle pepper and bourbon
- 4-6 slices thick cut bacon
- 3 tablespoons pure maple syrup
- 2 tablespoons bourbon (if needed sub water)
- 1/4 tsp cayenne pepper (or more to your taste)
- 4 slices really good whole grain bread (or your favorite breadI)
- 2-4 ounces smoked gouda cheese, sliced
- 2 cups spring lettuce mix + a handful of MicroGreens
- 2 heirloom or regular tomatoes, sliced
- 1 avocado, pitted + sliced
- 2 fried eggs (4 if you are making a giant BLT)
- salt and pepper, to taste
