Custard Popovers

Preheat oven to 450°F. Generously grease 10 muffin cups or 6 custard cups with shortening
- POPOVERS:
- 1 cup flour
- 1/2 teaspoon salt
- 2 eggs
- 1 cup milk
- 2 teaspoons butter or margarine
- FILLING:
- 1 cup sugar
- 3/4 cup all-purpose flour
- 3/4 teaspoon salt
- 3 cup milk
- 3 egg yolks
- 2 tablespoons butter
- 2 teaspoons vanilla
- 1/4 cup brandy
- 1/2 cup evaporated milk or whipping cream
Chocolate-Hazelnut Mousse Trifle

To Make the Cake Preheat the oven to 350 degrees Fahrenheit (180 C)
- For the Chocolate Cake
- 1 1/2 cups all-purpose flour
- 1 1/3 cups granulated sugar
- 1/2 cup unsweetened alkalized (aka Dutch-processed) cocoa powder (I like Valrhona)
- 1 1/4 tsp baking soda
- 1 1/4 tsp baking powder
- 1 tsp salt
- 2 1/2 fl oz vegetable oil
- 5 fl oz buttermilk, at room temperature
- 4 1/2 fl oz hot water or coffee
- 2 eggs, room temperature, beaten together
- 1 tbsp vanilla
- For the Hazelnut Mousse
- 8 ounces toasted, skinned hazelnuts
- 1 tbsp hazelnut oil or vegetable oil
- 3/4 cup heavy cream
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 tsp salt
- 8 ounces mascarpone cheese (can substitute cream cheese)
- For the Whipped Ganache
- 6 ounces semi-sweet chocolate, finely chopped
- 1 cup heavy cream
- To Decorate (optional)
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- Additional toasted hazelnuts, chocolate-covered nuts, chocolate curls, etc

- 1/4 cup plus 1 tablespoon Coffee Liqueur, divided

- 1 cup heavy cream

Crab Cakes With Lemon Cilantro Sauce

Lemon Cilantro Sauce Using a food processor, finely chop the garlic
- Lemon Cilantro Sauce
- ◦3 large garlic cloves
- ◦2 cups fresh cilantro
- ◦1/2 cup fresh flat leaf (Italian) parsley
- ◦1/4 cup sherry vinegar
- ◦1/3 cup olive oil
- ◦1/4 teaspoon cayenne
- ◦juice of 1 lemon
- ◦ jalapeño
- Crab Cakes
- ◦8 oz fresh Dungeness crab meat (or your favorite crab), cooked
- ◦4 tablespoons celery, finely diced
- ◦2 tablespoons chopped fresh cilantro
- ◦1 tablespoon chopped fresh parsley
- ◦1 tablespoon minced jalapeño
- ◦3 garlic cloves minced
- ◦zest of 1 lemon
- ◦3 tablespoons mayonnaise
- ◦1 cup panko breadcrumbs

- ◦2 cups fresh pea sprouts (or fresh micro greens)

Caramel Apple Dump cake

1.In a greased 9x13 dish, mix apple pie filling and caramel sauce
- 2 cans of apple pie filling (you can also use cherry, blueberry, etc.)
- 1 box of yellow cake mix
- 2 sticks of butter, melted (1 cup)
- 1/2 cup caramel sauce (like you would put on ice cream)
- 1/2 tsp cinnamon (optional)
- 1/2 cup chopped pecans (optional)
- Whipped cream for garnish (optional)
Tropical Green Smoothie (vegan, gluten-free)

Directions: All ingredients and amounts are to taste
- 1 to 2 cups frozen spinach
- 1 cup frozen pineapple chunks
- 1 cup frozen mango chunks

Homemade Chicken-Lemon Soup

Instructions Heat the olive oil in a dutch oven over medium-high heat
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves of garlic, minced
- 32 oz carton of chicken broth (or 4 cups)
- 2 cups water
- 3/4 cup uncooked rice (I like to use Basmati rice in this.)
- Juice of 1 lemon
- 2 tsp cornstarch
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 egg, lightly beaten
- 2 cups of chopped or shredded cooked chicken
- chopped fresh parsley and lemon wedges- for garnishing (optional)
Salisbury Steak with Mushroom Gravy

In a large bowl, combine beef, 1/4 can mushroom soup, bread crumbs, egg, onions, and steak seasoning
- 1 pound lean ground beef
- 1 (10-ounce) can condensed cream of mushroom soup, divided

- 1 teaspoon steak seasoning (recommended: Montreal)
